The aggregation and gelation of the pre-heated whey proteins could be either by heat treatment („heat-set“ gels) or by pH modificationsalts addition and high pressure treatment at low temperatures („cold-set“ gels) induced. Gelation of whey proteins in the „cold--set“ thermal mode was characterised for heat-denatured demineralised WPI. It was pH-induced gelation by GDL or Ca2+/Na+-induced gelation used. Effects of gelation temperatureGDLCaCl2 and NaCl concentration on the aggregation and gelation of WPI 11 more the rheological and texture properties of WPI gels and their syneresis were investigated. The pH-induced gelation and viscoelastic properties of gels were using dynamic oscillation rheometry evaluated. Texture properties of gels were by texture profile analysis characterised. The dependence of syneresis degree on CaCl2 concentration was using sedimentation analysis determined. The gelation rate and the degree of syneresis increased with gelation temperature and concentration of gelation agens.
